Gingerbread houses aren’t just for the holidays! The great thing about this summer log cabin cookie is that you can make it for any season. When the cold weather comes around, pipe some white royal icing on the trees, windowsills, and the roof to turn this design into a cozy Christmas gingerbread house!

Butterscotch candies are perfect for creating glowing windows on a gingerbread house (or chocolate cookie house, in this case!). Before baking the cookie, I placed crushed up candies in the window and door openings. The candies melt while the cookie bakes.
To make them glow, just place a few flameless candles behind the windows.



Here’s what you’ll need to make this summer log cabin cookie scene
These supplies are available in my Amazon store unless otherwise noted
- Chilled sheet of chocolate cookie dough
- 4” house cutter
- Small round and rectangle cutters
- Pine tree cookie cutter
- Craft knife for cutting windows
- Baking sheets and perforated baking mats
- Non-stick silicone baking mat
- 3-4 crushed butterscotch hard candies
- Wood grain silicone mat (I got mine at Micheal’s)
- Royal Icing
- Green, brown, and red food coloring (I used Chefmaster brand)
- 12” decorating bags with couplers
- 2 tipless decorating bags
- Decorating tips 2 and 3
- Bag ties or rubber bands
- Scribe tool
- Wax paper covered board for royal icing transfers
- Kraft or decorative paper covered board for assembling and displaying the house
- Round and flat decorator brushes (I used Sweet Sticks, Chua Cookie, and Wilton brands)
- Flameless tea lights for illuminating the windows
