The most important (but also most difficult) step to master before tackling these cookies is royal icing consistency. If the icing is too thick, it will be difficult to squeeze out of the bag and it won’t stick to the cookie. If it’s too thin, however, the icing will just run all over and won’t hold its shape.
The consistency I use to pipe these designs holds a soft peak. I call it medium consistency, but it’s also known as piping consistency.



Here’s what you’ll need to make these beautiful lace designs on gingerbread cookies
These supplies are available in my Amazon store unless otherwise noted
- Chilled sheet of cookie dough (I used my gingerbread cookie recipe)
- Heart cookie cutters (I used Ann Clark’s 3-¼” heart cookie cutter for the cookies and a 1-⅞” heart cookie cutter to trace as a guide for piping)
- Royal icing
- 12” decorating bag
- Scribe tool
- Wilton decorating tip 1 or PME tip 1.5
- Couplers & Bag ties (I used Wilton brand)
